Chicken Quinoa Coconut Curry Bowl

Ingredients

For the Coconut Curry Dressing:

  • 1 (13.5 ounce) can low-fat coconut milk
  • 1/4 cup natural creamy peanut butter
  • 1 tablespoon yellow curry powder
  • juice of a lime
  • 1/4 teaspoon salt

For the Salad:

  • 6 cups salad greens
  • 1.5 red bell pepper, chopped
  • 1.5 cup shredded carrots
  • 1.5 cup cucumber, chopped
  • 6 tablespoons chopped peanuts
  • 6 tablespoons chopped cilantro
  • 2 cups cooked chicken, shredded
  • 2 cups cooked quinoa

Directions

1. In a blender add coconut milk, peanut butter, lime juice and salt. Pulse to combine.
2. For each bowl add 1 cup salad greens, ¼ cup bell pepper, ¼ cup shredded carrots, ¼ cup cucumber, 1 tablespoon peanuts. 1 tablespoon cilantro, 1/3 cup shredded chicken, 1/3 cup quinoa. Then drizzle with dressing.
